Coconut Curry | खोबऱ्याची आमटी |
Coconut Curry is a version of Indian spicy curry. This curry recipe is made with coconut, peanuts, onion and spices. Do try it at home and share your feedback in the comments below.
Ingredients :
- 1 cup dry coconut pieces
- 1/2 cup of roasted peanuts powder
- 1 tsp roasted chana dal powder
- 1 tsp. mustard seeds
- 1/2 tsp. cumin seeds
- 4-5 garlic crushed
- 1/2 tsp. Ginger paste
- 1 chopped onion
- 1 chopped tomato
- 4-5 curry leaves
- 1 tsp. dhania powder (coriander powder)
- 1 tsp. turmeric powder
- 1 tsp. or to taste Kaala masala
- Salt to taste
- 2 tbsp. oil for tempering
- Coriander leaves finely chopped
Method -
- In a pan add little oil and saute dry coconut slices, onion and tomato. Roast them well then cool down and make a paste in a mixer.
- Now in separate bowl add chana dal powder, peanuts powder, turmeric powder, salt and 1 cup of water and mix it.
- Heat oil in a cooking pot, add mustard seeds, cumin seeds. As both seeds crack up add garlic paste, Fry till the garlic turns light brown then add ginger paste.
- Now add onion, tomato, coconut paste(as in step 2).
- Add curry leaves, dhania powder and kaala masala.
- Now add powder mix (as in step 3). Bring it to boil. After boiling add 3-4 cup of water.
- Let it cook for next 8-10 min. Keep stirring in between to avoid sticking to bottom.
- Serve hot with coriander leaves and rice or chapati.
