pulav rice is typically prepared with rice,vegetables and some very basic Indian spices.
- 1 cup rice
- 2 tbs mustard seeds
- 1/2 tsp cumin seeds
- 1 Bay leaf
- 1 inch piece Cinnamon
- 2 Cardamom
- 3 Cloves
- 4-5 Black Pepper
- Garlic paste
- 1 tsp Dhania powder (coriander powder)
- 1 tsp turmeric powder
- 1-2 green chili finely chopped
- 1 onion (finely chopped)
- 1 tomato (finely chopped)
- ½ cup Capsicum (finely chopped)
- ½ cup Potatoes (finely chopped)
- ½ cup Carrot (finely chopped)
- ½ cup green Peas
- ½ cup French Beans (finely chopped)
- Curry leaves
- Salt to taste
- 1 tbsp oil for tempering
- Coriander leaves finely chopped
- Rice Soaked for 15 minutes and drained
- Combine the cumin seeds,cloves and black Pepper in a broad non-sticky pan and saute on a medium flame for a few seconds.
- Remove from the flame and blend in a mixer to a smooth powder. Keep aside.
- Heat oil in a pressure cooker, add mustard seeds, cumin seeds. As both seeds crack up add Bay leaf,Cinnamon.
- Now add garlic paste, Fry till the garlic turns light brown.
- Add the onions and green chilies and saute on a medium flame for 1 to 2 minutes.
- Add all vegetables mix well and saute on, a medium fame for 1 to 2 minutes.
- Add 2% cups of hot water, salt, turmeric powder, dhania powder and dry spice powder.
- Add rice mix well and pressure cook for 3 whistles.
- Allow the steam to escape before opening the lid.
- Serve hot garnished with coriander.
