pulav rice | पुलाव

pulav rice is typically prepared with rice,vegetables and some very basic Indian spices.

Ingredients :
  • 1 cup rice
  • 2 tbs mustard seeds 
  • 1/2 tsp cumin seeds  
  • 1 Bay leaf 
  • 1 inch piece Cinnamon 
  • 2 Cardamom 
  • 3 Cloves 
  • 4-5 Black Pepper  
  • Garlic paste 
  • 1 tsp Dhania powder (coriander powder) 
  • 1 tsp turmeric powder
  • 1-2 green chili finely chopped 
  • 1 onion (finely chopped) 
  • 1 tomato (finely chopped) 
  • ½ cup Capsicum (finely chopped) 
  • ½ cup Potatoes (finely chopped) 
  • ½ cup Carrot (finely chopped) 
  • ½ cup green Peas 
  • ½ cup French Beans (finely chopped) 
  • Curry leaves 
  • Salt to taste
  • 1 tbsp oil for tempering
  • Coriander leaves finely chopped

Method
  1. Rice Soaked for 15 minutes and drained 
  2. Combine the cumin seeds,cloves and black Pepper in a broad non-sticky pan and saute on a medium flame for a few seconds. 
  3. Remove from the flame and blend in a mixer to a smooth powder. Keep aside.  
  4. Heat oil in a pressure cooker, add mustard seeds, cumin seeds. As both seeds crack up add Bay leaf,Cinnamon.  
  5. Now  add garlic paste, Fry till the garlic turns light brown.  
  6. Add the onions and green chilies and saute on a medium flame for 1 to 2 minutes.  
  7. Add all vegetables mix well and saute on, a medium fame for 1 to 2 minutes.  
  8. Add 2% cups of hot water, salt, turmeric powder, dhania powder and dry spice powder.  
  9. Add rice mix well and pressure cook for 3 whistles.  
  10. Allow the steam to escape before opening the lid.  
  11. Serve hot garnished with coriander.
