Zunka bhakar / झुणका भाकर

Zunka or Jhunka is a vegetarian traditional Indian dish prepared in Maharashtra , Goa and North Karnataka. It is essentially a chickpea flour porridge. It is also known by the name of pithla or pithle. Its ingredients are gram flour (besan), mixed with water to form a semi-solid paste.

Ingredients -

For Zunka :
  • 1 cup Gram flour (Besan)
  • 1 tsp mustard seeds 
  • 1/2 tsp cumin seeds
  • 1 tsp Garlic and Ginger paste
  • 1 tsp Dhania powder (coriander powder)
  • 1 tsp turmeric powder
  • 2-3 chili or 1 tsp red chili powder 
  • 1 chopped onion
  • 1 chopped tomato
  • 5-6 Curry leaves
  • Salt to taste
  • 1 tbsp oil for tempering
  • Coriander leaves finely chopped

There are two methods to make Zunka.
Method 1-
  1. Add 1 cup of water in gram flour and make smooth paste.
  2. Now Heat oil in a cooking pot, add mustard seeds, cumin seeds. As both seeds crack up add garlic paste and ginger paste.
  3. Add chopped onion. fry till the onion turn light pink. Add curry leaves.
  4. Now Add turmeric and red chili powder/chili.
  5. Add tomato and cook for 3-4 minutes.
  6. Now add the gram flour mixture, salt and add a cup (or more) of water to reduce the consistency. 
  7. Mix constantly. Bring it to boil.
  8. Serve hot with coriander, onion and bhakar.
Method 2-
  1. Heat oil in a cooking pot, add mustard seeds, cumin seeds. As both seeds crack up add garlic paste and ginger paste.
  2. Add chopped onion. fry till the onion turn light pink.
  3. Add curry leaves.
  4. Now Add turmeric and red chili powder/chili.
  5. Add tomato and cook for 3-4 minutes.
  6. Add a 3 cup of water and salt and bring it to boil.
  7. Now Add gram flour and mix well(whisk till there is no lumps). and cook for 4-5 min.
  8. Serve hot with coriander, onion and bhakar.
